  • 4 large chicken breasts, chopped into bite-sized pieces and patted dry
  • 2 tbsp sesame oil (for a nutty flavor)
  • ½ tsp pepper (freshly cracked for better taste)
  • ½ tsp onion powder (adds depth)
  • ¼ cup apple juice (or bourbon if available; bourbon gives depth, apple juice works fine)
  • ¼ cup ketchup (for sweetness and color)
  • ½ cup soy sauce (use light soy to reduce saltiness)
  • ¼ cup water (to balance flavors)
  • ⅔ cup brown sugar (for that delightful sweetness)
  • ½ tsp ground ginger (for a hint of spice)
  • 3 tsp minced garlic (fresh garlic = bigger flavor)
  • 1 tbsp cornstarch (for coating chicken)
  • 1 tsp cornstarch (for thickening sauce)
  • ¼ cup green onions, sliced (for garnish)

How to Make Bourbon Chicken

['Close-up view of juicy Bourbon Chicken pieces garnished with green onions.', 'Side view of Bourbon Chicken showing tender chicken pieces coated in sauce.', 'Delicious Bourbon Chicken served on a plate with a glossy sauce.', 'Vibrant Bourbon Chicken close-up with a focus on the rich, caramelized glaze.']

Now that we’ve gathered our ingredients, let’s get cooking! Follow these straightforward steps for Bourbon Chicken that sings with flavor:

1. Marinate the Chicken

Combine the sesame oil, apple juice (or bourbon), soy sauce, brown sugar, garlic, ginger, onion powder, and pepper in a large bowl. Add the chicken pieces and stir until they are well coated. Cover and let them marinate for at least 30 minutes — or overnight for deeper flavor.

2. Sear the Chicken

In a large skillet over medium-high heat, add a splash of sesame oil. Once hot, remove the chicken from the marinade (reserve the marinade) and sprinkle with cornstarch. Sear the chicken pieces until golden brown, about 5-6 minutes, stirring occasionally.

3. Make Extra Sauce (Optional Step)

In the same skillet, pour in the reserved marinade. Bring it to a simmer and let it cook for about 5 minutes to thicken. If you’d like a thicker sauce, mix the cornstarch with a little water and add it to the pan.

4. Serve and Enjoy

Once the chicken is cooked through and the sauce has thickened, it’s time to plate up! Serve the Bourbon Chicken over a bed of rice or alongside steamed vegetables. Garnish with sliced green onions for a pop of color.

Pro Tips for Perfect Bourbon Chicken

Want to elevate your Bourbon Chicken to a whole new level? Here are some expert insights:

  • Marinating Matters: Letting the chicken marinate longer enhances the flavors significantly, so don’t rush this step.
  • Heat Control: Keep the heat at medium-high to ensure a good sear without burning the sauce.
  • Fresh Ingredients: For the best flavor, use fresh garlic and ginger instead of powdered versions.
  • Adjust Sweetness: If you prefer a less sweet sauce, reduce the amount of brown sugar.
  • Texture Tips: Coating the chicken in cornstarch before cooking helps achieve that crispy exterior.
  • Serving Variations: Serve it over rice, noodles, or even in a wrap for a different twist.
  • Leftover Love: This dish tastes even better the next day, making it perfect for meal prep.
  • Garnish Wisely: Fresh herbs like cilantro or basil can add a refreshing touch on top.

Common Mistakes and Troubleshooting

Even the best chefs can run into a few hiccups. Here are some common mistakes and how to avoid them:

  • Overcooking the Chicken: Keep an eye on the chicken; overcooked meat can become dry. Aim for an internal temperature of 165°F.
  • Too Much Sauce: If the sauce is too runny, let it simmer longer to reduce. You can also mix in a bit of cornstarch to thicken it up.
  • Skipping the Marinade: Don’t skip marinating; it’s crucial for achieving that depth of flavor.

Variations of Bourbon Chicken

Feeling adventurous? Here are some variations to try:

  • Spicy Bourbon Chicken: Add red pepper flakes or sriracha to the marinade for a kick of heat.
  • Vegetable-Loaded Version: Toss in bell peppers and broccoli during the cooking process for added nutrition.
  • Slow Cooker Bourbon Chicken: Place marinated chicken in a slow cooker and cook on low for 4-6 hours for a hands-off approach.
  • Pineapple Bourbon Chicken: Add chunks of pineapple to the sauce for a tropical twist.

Storing and Make-Ahead Instructions

Looking to prepare in advance? Here’s how to store and reheat your Bourbon Chicken:

  • Refrigerate: Store leftover Bourbon Chicken in an airtight container in the fridge for up to 3 days.
  • Freeze: You can freeze cooked Bourbon Chicken for up to 3 months. Just be sure to cool it completely before freezing.
  • Reheat: To reheat, simply warm in a skillet over low heat until heated through, adding a splash of water or broth to prevent drying out.

  • Room Temperature: Let your chicken sit at room temperature for about 30 minutes before roasting. This helps it cook evenly.
  • Dry the Skin: Pat the chicken dry with paper towels before seasoning. A dry surface helps achieve a crispy skin.
  • Compound Butter: Mix softened butter with herbs and spread it under the skin for a burst of flavor. This keeps the chicken moist and flavorful.
  • Don’t Rush: Allow the chicken to rest after cooking for at least 15 minutes. This helps the juices redistribute, making for a juicier bite.
  • Check Internal Temperature: Use a meat thermometer to ensure the chicken reaches 75°C (165°F) for safety.
  • Flavor Variations: Experiment with different herbs and spices. Consider adding saffron for a unique twist or chili flakes for some heat.
  • Layering Flavors: Sauté the onions and garlic before adding the rice, allowing them to release their flavors fully into the dish.
  • Don’t Skip the Stock: Using chicken stock instead of water for the rice is key—it enhances the overall flavor.

Common Mistakes and Troubleshooting

Even seasoned cooks can run into issues. Here’s how to avoid common pitfalls:

  • Overcooking the Chicken: If the chicken is cooked too long, it will dry out. Keep an eye on the internal temperature.
  • Undercooked Rice: Ensure your rice is fully cooked by checking the liquid-to-rice ratio. If it’s still hard, add a bit more stock and cook longer.
  • Too Much Fat: If your chicken releases too much fat, spoon some out before adding the rice to prevent it from becoming greasy.
  • Not Enough Seasoning: Taste your rice before serving. If it lacks flavor, adjust with more salt or herbs.

Variations to Try

Mix things up with these fun variations:

  • Herb-Infused: Use a combination of fresh herbs like basil, dill, and parsley for a fragrant twist.
  • Vegetable Lovers: Add your favorite vegetables like carrots, bell peppers, or peas to the rice for added nutrition.
  • Spicy Kick: Incorporate diced jalapeños or diced chili peppers into the rice for a heat boost.
  • Nutty Addition: Toss in some toasted almonds or pine nuts for a crunchy texture contrast.

  • 1/2 teaspoon ground cumin

How to Make Chipotle Chicken Empanadas

['Close-up view of golden-brown Chipotle Chicken Empanadas with a flaky crust.', 'Side view of juicy Chipotle Chicken Empanadas, showcasing a crispy exterior.', 'Deliciously stuffed empanadas filled with shredded chicken and spices, displayed on a plate.', 'A close-up of two Chipotle Chicken Empanadas emphasizing the filling and texture.']

Now, let’s roll up our sleeves and get cooking!

Step 1: Preheat and Prep

Preheat your oven to 400°F and line a baking sheet with parchment paper. This will ensure your empanadas bake evenly and don’t stick.

Step 2: Sauté the Aromatics

In a skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3 to 4 minutes until softened. Then, stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 3: Build the Filling

Next, add the shredded chicken, chopped chipotle peppers, ground cumin, smoked paprika, salt, and black pepper. Stir well and cook for about 2 minutes to let the flavors meld together. Reduce the heat to low and add the softened cream cheese. Stir until it’s melted and evenly combined.

Step 4: Add Cheese

Mix in the shredded Monterey Jack cheese and cook until it’s melted and the filling is thick. Remove from heat and let cool for about 5 minutes.

Step 5: Fill the Empanadas

Spoon about 1/4 cup of the filling into the center of each dough round. Fold the dough over into a half-moon shape, sealing the edges with a fork. This step is crucial to keep that delicious filling inside!

Step 6: Bake to Perfection

Brush the tops of the empanadas evenly with the beaten egg for a lovely golden finish. Bake for 18 to 22 minutes, or until they’re golden brown and crisp. Let them cool slightly before serving.

Pro Tips for the Perfect Empanadas

  • Don’t overfill: A little filling goes a long way! Overfilling can cause them to burst while baking.
  • Cool the filling: Let the filling cool slightly before assembling to prevent the dough from becoming soggy.
  • Experiment with flavors: Feel free to add black beans, corn, or diced bell peppers to the filling for added texture and flavor.
  • Use homemade or store-bought dough: Both work well! Just ensure they’re thawed if frozen.
  • Make it spicy: Adjust the amount of chipotle peppers based on your heat preference, or add jalapeños for an extra kick.
  • Serve with dipping sauces: Pair your empanadas with fresh guacamole, salsa, or a creamy ranch for a complete experience.
  • Freeze for later: These empanadas freeze beautifully. Just bake them for a few extra minutes when cooking from frozen.
  • Use an air fryer: For a healthier option, air-fry the empanadas at 375°F for 12-15 minutes until crispy.

Common Mistakes and Troubleshooting

Even the best of us can run into a snag while cooking. Here are a few common mistakes and how to avoid them:

  • Too much moisture in the filling: If your filling is too wet, it can make the dough soggy. Always drain any excess moisture from ingredients like beans or vegetables before adding them.
  • Sealing failure: If your empanadas are opening up while baking, ensure you’re sealing the edges tightly with the fork.
  • Burnt bottoms: If your empanadas are burning on the bottom, check your oven temperature and consider lowering it slightly.

Delicious Variations

Want to mix things up? Here are some variations to try:

  • Vegetarian option: Substitute shredded chicken with sautéed mushrooms and spinach for a hearty vegetarian empanada.
  • Buffalo chicken: Use buffalo sauce instead of chipotle for a spicy twist. Add crumbled blue cheese for an extra kick.
  • Cheesy beef: Replace chicken with ground beef and add cheese and spices for a meaty variation.
  • Sweet empanadas: For dessert, fill them with apples and cinnamon, then bake with a sprinkle of sugar on top.

Storage and Make-Ahead Instructions

These empanadas can be made ahead of time, making them a great option for busy days.

  • Refrigeration: Store cooked empanadas in an airtight container in the fridge for up to 3 days.
  • Freezing: Freeze uncooked empanadas on a baking sheet until firm, then transfer to a freezer bag for up to 3 months. Bake from frozen when you’re ready to enjoy.

Nutrition Tips and Dietary Adaptations

Want to make these empanadas fit your dietary needs? Here are some tips:

  • Gluten-free: Use gluten-free empanada dough or even corn tortillas for a delicious alternative.
  • Lower calories: Opt for reduced-fat cream cheese and cheese to cut down on calories without sacrificing flavor.

  • Heat Control: Keep your pan at medium heat to avoid burning the tortillas while ensuring the cheese melts thoroughly.
  • Layering: Always layer cheese on both sides of the filling to create a gooey, melty texture that holds everything together.
  • Don’t Overstuff: While it’s tempting to add more fillings, overstuffing can lead to a messy quesadilla that’s hard to flip.
  • Use a Grill Pan: For an extra crispy exterior, cook your quesadilla on a grill pan to add those beautiful grill marks.
  • Resting Period: Let the quesadilla sit for a minute after cooking to allow the cheese to set, making it easier to cut.
  • Fresh Ingredients: Opt for fresh herbs and quality chicken to enhance the overall flavor of your quesadilla.
  • Try Different Cheeses: Mixing cheeses can provide a deeper flavor profile; consider adding gouda or feta for a unique twist.
  • Serve with Dips: Enhance your meal with sides like guacamole, salsa, or sour cream for dipping.

Common Mistakes and Troubleshooting

Even the best of us can run into hiccups while cooking. Here are some common mistakes and how to avoid them:

  • Burnt Tortillas: If the tortillas are burning before the cheese melts, lower the heat and allow for a longer cooking time.
  • Insufficient Cheese: Ensure you’re using enough cheese to create that sought-after melt; it’s the glue that holds the quesadilla together!
  • Uneven Cooking: Rotate your quesadilla occasionally to ensure even browning on both sides.
  • Filling Spillage: If your fillings spill out, try using less or making sure to fold the tortilla gently rather than flattening it too hard.

Delicious Variations

Feeling adventurous? Here are some variations to spice up your Chicken al Pastor Quesadillas:

  • BBQ Chicken Quesadilla: Swap the al pastor chicken with BBQ chicken for a smoky twist.
  • Veggie Delight: Use grilled vegetables like bell peppers, mushrooms, and zucchini instead of chicken for a fresh, vegetarian option.
  • Breakfast Quesadilla: Add scrambled eggs, avocado, and cheese for a hearty breakfast version.
  • Spicy Chipotle: Incorporate chipotle sauce into the chicken mix for an extra kick of heat.

Storage and Make-Ahead Instructions

If you want to prepare ahead, here’s how to store your quesadillas:

  • Refrigeration: Cooked quesadillas can be wrapped in foil or placed in an airtight container in the refrigerator for up to 3 days.
  • Freezing: For longer storage, freeze uncooked quesadillas wrapped individually. When ready to eat, cook from frozen, adding a few extra minutes to the cooking time.
  • Reheating: To reheat, place in a skillet over medium heat for 5 minutes per side, ensuring the cheese melts again and the tortilla crisps up.

  • 1 lb chicken breast or thighs (cut into bite-sized pieces)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 3 tablespoons honey (raw or mild-flavored)
  • 4 cloves garlic (minced)
  • 1 teaspoon grated ginger (fresh preferred)
  • 1/2 teaspoon red chili flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 8 oz noodles (rice noodles or egg noodles)
  • 2 green onions (chopped)
  • 1 teaspoon sesame seeds (optional)

Cooking This Asian-Inspired Dish Step by Step

  1. Cook the Noodles: Bring a medium pot of salted water to a rolling boil. Cook the noodles according to package instructions until al dente, usually 6-8 minutes. Drain thoroughly, toss with a little oil to prevent sticking, and set aside.
  2. Prepare the Chicken: Cut the chicken into uniform bite-sized pieces (about 1-inch chunks) if not already done. Toss the chicken pieces in a bowl with 2 tablespoons cornstarch until evenly coated with a light dusting.
  3. Cook the Chicken: Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the cornstarch-coated chicken in a single layer without overcrowding. Cook for 4-5 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F. Remove chicken to a plate and set aside.
  4. Sauté the Aromatics: In the same skillet, add minced garlic and grated ginger. Sauté for 30-60 seconds until fragrant but not browned, watching closely to prevent burning.
  5. Add the Sauce: Stir in soy sauce, honey, and red chili flakes if using. Cook for 2-3 minutes, stirring constantly, until the sauce thickens slightly and coats the back of a spoon. If you prefer a thicker sauce, whisk 1-2 teaspoons additional cornstarch with equal parts water and stir into the bubbling sauce.
  6. Combine Chicken and Sauce: Return the cooked chicken to the skillet and toss for about 1 minute until every piece is completely coated in the sticky sauce.
  7. Add the Noodles: Finally, add the cooked noodles to the skillet. Toss thoroughly for another minute until noodles are warmed through and coated in sauce. Remove from heat.
  8. Garnish and Serve: Sprinkle with chopped green onions and sesame seeds. Serve hot immediately.

Pro Tips for Perfect Sticky Garlic Chicken Noodles

['Close-up view of sticky garlic chicken noodles with tender chicken pieces and garnishes.', 'Side view of a bowl filled with sticky garlic chicken noodles, showcasing glistening sauce and toppings.', 'Juicy sticky garlic chicken served on a bed of noodles, displaying vibrant green onions and sesame seeds.', 'A delicious serving of sticky garlic chicken noodles, emphasizing the rich glaze and fresh ingredients.']
  • Marinate for Extra Flavor: If time allows, marinate the chicken in soy sauce and honey for 30 minutes before cooking.
  • Adjust the Heat: Feel free to modify the amount of red chili flakes based on your spice tolerance.
  • Use Fresh Ingredients: Fresh garlic and ginger make a significant difference in flavor compared to dried or powdered versions.
  • Don’t Overcrowd the Pan: Cook the chicken in batches if necessary. Overcrowding leads to steaming instead of browning.
  • Keep an Eye on the Sauce: Watch the sauce closely as it thickens; you want it sticky, not burnt!
  • Try Different Noodles: Experiment with various noodles, such as udon or soba, to switch up the texture.
  • Leftovers are Gold: Store leftovers in an airtight container in the fridge for up to 3 days, perfect for a quick meal!
  • Garnish Wisely: Fresh herbs like cilantro or Thai basil can add a nice touch to your dish.

Common Mistakes and Troubleshooting

Even the best cooks can make mistakes. Here are some common pitfalls and how to avoid them:

  • Too Saucy: If your dish ends up too watery, try simmering it longer to reduce the sauce.
  • Overcooked Chicken: Always check the internal temperature to avoid dry chicken.
  • Sticky Noodles: To prevent noodles from sticking together, rinse them under cold water after cooking.
  • Boring Flavor: If the dish tastes bland, add more soy sauce or a splash of rice vinegar for acidity.

Variations of Sticky Garlic Chicken Noodles

This recipe is incredibly versatile! Here are some variations you might enjoy:

  • Vegetarian Version: Substitute chicken with tofu or tempeh and use vegetable broth instead of soy sauce.
  • Add Veggies: Toss in some bell peppers, broccoli, or snap peas for extra color and nutrition.
  • Spicy Version: Incorporate sriracha or chili paste into the sauce for an extra kick.
  • Coconut Cream Twist: Add a splash of coconut cream for a rich, creamy sauce that complements the garlic.

Now that we have our ingredients, let’s get cooking! Follow these steps to create your Chicken Tortilla Soup:

  1. Preheat your oven to 350°F (175°C).
  2. Wash and quarter the Roma tomatoes, removing stems and most seeds. Chop them into large pieces. Peel and cut the onion into large chunks. Quarter the jalapeño pepper, removing the stem, rib, and most seeds, then chop it into large pieces. Toss the tomatoes, onion, and jalapeño with 3 teaspoons of vegetable oil and spread them evenly on a parchment-lined sheet pan.
  3. Cut the top third off the head of garlic to expose the cloves, drizzle with the remaining teaspoon of vegetable oil, and place it on the sheet pan with the other veggies.
  4. Roast the vegetables and garlic for about 40 minutes, until tender and slightly caramelized. Transfer the roasted tomatoes to a bowl and drain the canned tomatoes, mixing them together.
  5. Squeeze the roasted garlic cloves out of the head onto a cutting board and roughly chop them along with the onion and jalapeño mixture.
  6. Chop the celery and set aside.
  7. In a large soup pot, melt 2 tablespoons of butter over medium-high heat. Add the chopped celery and cook for 3-4 minutes, stirring occasionally.
  8. Add the chopped onion, jalapeño, and roasted garlic to the pot and cook for another minute.
  9. Stir in the tomatoes and shredded chicken, followed by the spices: chili powder, cumin, smoked paprika, cayenne pepper, and salt. Mix well to combine.
  10. Pour in the chicken stock, bring to a gentle boil, then reduce the heat, cover, and let simmer for about 30 minutes. Add lime juice to taste, adjusting salt if necessary.
  11. For the tortilla strips, heat 1/4 cup vegetable oil in a non-stick skillet over medium-high heat. Add the tortilla strips and cook, stirring often, until they are lightly browned and crisp. Remove them with a slotted spoon and cool on a paper towel-lined plate.
  12. To serve, top each bowl of soup with crispy tortilla strips, shredded cheese, and a dollop of sour cream if desired.
