Chicken & Wild Rice Soup

A hearty and comforting soup combining tender chicken, wild rice, and aromatic herbs in a flavorful broth.

Ingredients

Ghee and vegetables

  • 2 tablespoons ghee
  • 1 medium yellow onion, diced (about 2 cups)
  • 2 medium carrots, peeled and diced (about 1.5 cups)
  • 4 cloves garlic, minced
  • 2 tablespoons cassava flour (or gluten-free all-purpose flour)
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Freshly ground black pepper

Broth and herbs

  • 8 cups low-sodium chicken bone broth (e.g., Kettle & Fire)
  • 1 cup wild rice, rinsed and drained (see note in instructions)
  • 6 sprigs fresh thyme
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon chopped fresh sage

Chicken and finishing touches

  • 3 cups shredded pre-cooked chicken
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh parsley

Instructions 

  • Rinse and drain the rice to remove excess starch.
  • Heat ghee in a large pot, cook onions and carrots until tender (~5-7 min). Add garlic and cook 1 min. Stir in flour, salt, oregano, pepper; toast 1 min.
  • Pour in broth, scrape browned bits. Add rice, thyme, bay leaves, rosemary, sage. Bring to boil, then simmer covered for 25 min until rice is tender.
  • Add chicken, cook covered for 10 min. Remove herbs, stir in lemon zest, lemon juice, parsley. Serve hot.

Notes

Ensure to rinse the rice well to prevent gumminess.
