8cupslow-sodium chicken bone broth(e.g., Kettle & Fire)
1cupwild rice, rinsed and drained(see note in instructions)
6sprigsfresh thyme
2teaspoonschopped fresh rosemary
1teaspoonchopped fresh sage

3cupsshredded pre-cooked chicken
1teaspoonlemon zest
2tablespoonsfresh lemon juice
1/4cupchopped fresh parsley
Instructions
Rinse and drain the rice to remove excess starch.
Heat ghee in a large pot, cook onions and carrots until tender (~5-7 min). Add garlic and cook 1 min. Stir in flour, salt, oregano, pepper; toast 1 min.
Pour in broth, scrape browned bits. Add rice, thyme, bay leaves, rosemary, sage. Bring to boil, then simmer covered for 25 min until rice is tender.
Add chicken, cook covered for 10 min. Remove herbs, stir in lemon zest, lemon juice, parsley. Serve hot.
Notes
Ensure to rinse the rice well to prevent gumminess.
