  3. Heat the Grill: Preheat your grill to medium heat. This ensures the chicken cooks evenly and gets those lovely grill marks.
  4. Grill the Chicken: Place the marinated chicken thighs on the grill. Cook for about 4-6 minutes on one side, then flip and baste with the reserved marinade. Cook for an additional 4-6 minutes until the internal temperature reaches 165°F.

Pro Tips for Perfect Grilled Chicken

Here are some expert insights to elevate your grilled chicken game:

  • Use Fresh Ingredients: Whenever possible, opt for fresh lemon juice and basil to enhance the flavors.
  • Don’t Skip the Marinade: Allowing the chicken to marinate for the full duration will yield the best flavor and tenderness.
  • Monitor Temperature: Use a meat thermometer to ensure the chicken is perfectly cooked without being dry.
  • Experiment with Seasonings: Feel free to add your favorite spices or herbs to the marinade for a personal touch.
  • Let It Rest: Resting the chicken after grilling prevents moisture loss and keeps each bite succulent.

  • Pair with Seasonal Vegetables: Serve with grilled or roasted veggies for a complete meal that celebrates summer.
  • Make It a Meal Prep: Prepare extra chicken to use in salads, wraps, or sandwiches throughout the week.

Common Mistakes and Troubleshooting

Even the best chefs can run into a few bumps. Here’s how to avoid common pitfalls:

  • Not Enough Marinade Time: Rushing through the marinating process can lead to bland chicken. Patience is key!
  • Skipping the Resting Period: Cutting into the chicken right after grilling will cause juices to escape. Give it a few minutes to settle.
  • Not Preheating the Grill: Ensure your grill is hot before adding the chicken to get that perfect sear.

Delicious Variations

If you’re looking to switch things up, consider these variations:

  • Spicy Honey Lemon Chicken: Add a pinch of cayenne pepper or a splash of hot sauce to the marinade for a kick.
  • Honey Mustard Basil Chicken: Substitute half of the honey with Dijon mustard for a tangy twist.
  • Citrus Herb Chicken: Mix in orange juice and zest along with lemon for a citrus medley.
  • Garlic Lemon Basil Chicken: Incorporate minced garlic into the marinade for an aromatic boost.

  1. Prepare the Rice: In a pot, combine 1.5 cups of jasmine rice with 2 cups of water. Bring it to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
  2. Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Toss the chicken pieces with 1 tablespoon of cornstarch, salt, and pepper. Once the oil is hot, add the chicken and cook until browned and cooked through, about 7-10 minutes.
  3. Make the Sauce: In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey or maple syrup, grated ginger, minced garlic, and 1 tablespoon of water mixed with 1 teaspoon of cornstarch. Pour this sauce over the chicken and stir until everything is well coated and the sauce thickens slightly.
  4. Assemble the Bowl: In serving bowls, start with a base of jasmine rice. Top with the sweet chili chicken, followed by a colorful arrangement of diced cucumber, shredded carrots, and edamame. Garnish with sliced green onions and a sprinkle of sesame seeds.

  • Chicken: Choose 500 g of boneless skinless chicken breast or thighs. For a vegetarian option, replace with grilled tofu or chickpeas.
  • Olive Oil: This is crucial for marinating the chicken and making the dressing. You can substitute with avocado oil if preferred.
  • Spices: Season the chicken with 1 tsp each of paprika, cumin powder, and coriander powder. Feel free to experiment with your favorite spices.
  • Fresh Vegetables: We recommend cherry tomatoes, cucumber, red onion, shredded carrots, and avocado. Adjust based on what’s in season or what you have on hand.

Step-By-Step Preparation Guide

A vibrant Lentil and Chicken Power Bowl showing layers of lentils, grilled chicken, fresh vegetables, and yogurt dressing.

Follow these simple steps to create your lentil chicken power bowl:

  1. Add rinsed lentils, 3 cups of water, 0.5 tsp salt, turmeric, and a bay leaf to a medium saucepan. Bring to a boil over medium-high heat. Once boiling, reduce to low heat and simmer uncovered for 20-25 minutes until tender but not mushy. Drain excess water if necessary and discard the bay leaf. Set aside.
  2. In a bowl, combine olive oil, paprika, cumin, coriander powder, black pepper, garlic paste, lemon juice, and salt. Coat the chicken evenly with the marinade. Let it rest for at least 10-15 minutes or up to 1 hour for deeper flavor.
  3. Preheat oven to 200°C (400°F). Place the marinated chicken on a lined baking tray. Roast for 18-22 minutes or until fully cooked (internal temperature reaches 75°C or 165°F).
  4. Alternatively, cook on a stovetop grill pan over medium heat for 5-7 minutes per side.
  5. Let the chicken rest for 5 minutes before slicing. This keeps it juicy.
  6. In a small bowl, whisk together yogurt, olive oil, lemon juice, garlic, salt, pepper, and oregano or cumin. Mix until smooth and creamy. Adjust seasoning if needed.
  7. While the chicken rests, chop the tomatoes, cucumber, onion, and herbs. Slice the avocado just before assembling to keep it fresh.
  8. Divide cooked lentils evenly into four bowls as the base. Top with sliced chicken, arranging cherry tomatoes, cucumber, shredded carrots, red onion, and avocado around the bowl.
  9. Drizzle generously with yogurt dressing and finish with fresh parsley or cilantro.
  10. Serve immediately or store for meal prep.

Tips for Perfect Results Every Time

Here are some expert tips to ensure your power bowls turn out beautifully:

  • Cook Lentils Right: Be careful not to overcook the lentils; they should hold their shape and not turn mushy.
  • Marinate Chicken: Allow the chicken to marinate longer for enhanced flavor. Overnight is ideal if time allows.
  • Fresh Ingredients: Use the freshest vegetables for the best flavor and texture in the bowl.
  • Adjust Seasoning: Taste the yogurt dressing and adjust the seasoning to your liking before serving.
  • Texture Variety: Include a mix of textures by adding crunchy nuts or seeds on top, like sunflower seeds or chopped almonds.
  • Batch Cooking: Make a larger batch of lentils and freeze extras for quick meals later.
  • Experiment with Herbs: Fresh herbs like basil or dill can add a delightful twist to the bowl.
  • Serving Temperature: This dish can be enjoyed warm or cold, making it versatile for any meal setting.

Common Mistakes and Troubleshooting

Even the best cooks can make mistakes. Here are some common pitfalls and how to avoid them:

  • Imbalanced Flavors: Taste your bowl before serving. Adjust seasoning as necessary to ensure a balanced flavor profile.

Variations to Try

Here are four variations to help you customize your lentil chicken power bowl:

  • Marinate longer: For more flavor, marinate the chicken for several hours or overnight.
  • Grill for smoky flavor: If possible, grill on an outdoor grill for that authentic taste.
  • Rest the chicken: Allow the chicken to rest for a few minutes before serving to retain juices.
  • Customize the spice level: Adjust the amount of sriracha based on your heat preference.
  • Experiment with rice: Substitute jasmine rice with brown rice or quinoa for a healthier twist.
  • Make it gluten-free: Use tamari instead of soy sauce for a gluten-free option.
  • Vary the salsa: Try adding diced bell peppers or jalapeños for an extra crunch.

Common Mistakes and Troubleshooting

Even the best recipes can trip you up. Here’s how to avoid common pitfalls:

  • Overcooking the chicken: Keep a close eye on the cooking time to avoid dryness.
  • Not marinating enough: A quick marinate won’t impart as much flavor.
  • Skipping the resting period: Don’t cut into the chicken immediately after cooking; let it rest first.
  • Rushing the rice: Allow the rice to cook undisturbed for perfect texture.

Variations to Try

Feel free to mix things up with these delicious variations:

  • Spicy Pineapple Chicken Bites: Substitute mango with pineapple for a tropical twist.
  • Herb-Infused Coconut Rice: Add fresh herbs like basil or mint to the rice for added flavor.
  • Vegetarian Option: Replace chicken with firm tofu or tempeh for a meatless version.
  • Grilled Veggie Bowl: Add grilled vegetables like zucchini and bell peppers for added nutrients.

Storage and Make-Ahead Instructions

Planning ahead? Here’s how to store and prepare in advance:

  • Refrigerate: Store leftovers in an airtight container for up to 3 days.
  • Freeze: The chicken bites can be frozen for up to 2 months. Thaw in the fridge before reheating.
  • Make-ahead rice: Cook the coconut rice a day in advance and reheat before serving.
  • Prep salsa ahead: The mango avocado salsa can be made a few hours before serving; just add lime juice to prevent browning.

Step-by-Step Cooking Process

Side view of a delicious serving of Garlic Parmesan Chicken Pasta Bake, showing chicken and cheese melted on top.

Let’s roll up our sleeves and get cooking! Follow these steps for a perfect chicken pasta bake.

Prep Work

  • Roast the garlic: If you haven’t done this yet, roast your garlic until golden brown. Let it cool, then squeeze the cloves into a bowl.
  • Prepare the chicken: Cut chicken into 1-inch cubes, and get your other ingredients ready—mince garlic, grate parmesan, and set aside.

Sauté the Chicken

  • Heat your Ninja Foodi or Instant Pot on High Sear Sauté. Melt 2-4 Tbsp of butter, then add in your cubed chicken along with seasonings except for parsley.
  • Sear until browned on one side, then flip the chicken. Add in the minced garlic and sauté for 2-3 minutes, stirring to prevent burning.

Add the Pasta and Broth

  • Once the chicken is browned, add the rotini pasta, roasted garlic, and chicken broth. Scrape any bits stuck to the pot as you stir in the remaining butter.

Pressure Cook

  • Secure the lid, set the valve to Seal, and pressure cook on High for 4 minutes. After cooking, let it naturally release for 10 minutes before manually releasing any remaining pressure.

Finishing Touches

  • Stir in the grated parmesan until it melts into the sauce. Gradually add in the heavy cream until you achieve your desired consistency.
  • If using, mix in the dried parsley and stir in fresh spinach until wilted.

Pro Tips for the Perfect Bake

These expert insights will elevate your cooking game:

  • Don’t rush the sauté: Searing the chicken properly adds depth of flavor that’s hard to replicate.
  • Adjust your seasonings: Taste the sauce before serving; don’t be afraid to add more salt or pepper to suit your palate.
  • Cheese options: Feel free to mix in mozzarella for a gooey texture along with the parmesan.
  • Make it ahead: Assemble your bake in advance and refrigerate until you’re ready to bake; this helps the flavors meld beautifully.
  • Watch the pasta: Ensure your pasta is al dente before pressure cooking; it will continue to cook in the oven.
  • Experiment with proteins: Swap out chicken for cooked sausage or rotisserie chicken for a quicker prep time.
  • Use fresh ingredients: Whenever possible, fresh garlic and herbs will enhance the dish’s overall flavor.
  • Layer your flavors: Consider adding sautéed onions or bell peppers for an extra layer of taste.

Common Mistakes and Troubleshooting

Let’s tackle some common issues you might encounter:

  • Overcooked pasta: If you notice your pasta is mushy, ensure you’re cooking it al dente next time and remember it will cook in the pressure cooker.
  • Thin sauce: If your sauce seems too thin, let it simmer for a few minutes after pressure cooking to thicken up.
  • Not enough flavor: Always taste as you go; seasonings can vary in strength, and you might need to adjust.

Variations to Try

Change things up with these fun twists:

  • Vegetarian Version: Replace chicken with sautéed mushrooms or chickpeas and add more veggies like zucchini and bell peppers.
  • Spicy Kick: Add red pepper flakes or diced jalapeños for a spicy version that’ll wake up your taste buds.
  • Cheesy Delight: Top with a mix of mozzarella and cheddar cheese before baking for a cheesier finish.
  • Herb Infusion: Experiment with different herbs like thyme, oregano, or basil to customize the flavor profile.

Storage and Make-Ahead Instructions

This dish is perfect for meal prepping! Here’s how to store and reheat:

  • Refrigerate: Store leftovers in an airtight container for up to 3 days. Reheat in the oven for the best texture.
  • Freeze: You can freeze the assembled casserole before baking. Just thaw overnight in the fridge and bake as directed.
  • Make-ahead: You can prepare the entire dish, cover it, and refrigerate for up to 24 hours before baking. Just increase the baking time by a few minutes.
