Ingredients

Protein

  • 1 pack bbq chicken flatties

Vegetables

  • 1 4 red cabbage, thinly shredded
  • 1.5 limes freshly squeezed lime juice
  • 1/2 tsp salt
  • 2 tbsp fresh coriander, roughly chopped
  • 15 oz sweetcorn, drained
  • 1 tbsp olive oil
  • 1.5 tbsp cajun spice
  • 1/2 tsp smoked paprika

Carbohydrates

  • 1 pack spicy rice

Greens

  • 1/2 head little gem lettuce, sliced into 1/2-inch ribbons
  • 6 tbsp buttermilk ranch dressing

Instructions 

  • Cook the BBQ chicken flatties according to package instructions and shred if needed.
  • In a bowl, combine shredded chicken, shredded cabbage, lime juice, salt, coriander, sweetcorn, olive oil, cajun spice, and smoked paprika. Toss to coat.
  • Prepare the spicy rice as per package instructions.
  • Slice the little gem lettuce into ribbons.
  • Assemble bowls with rice, chicken mixture, lettuce, and drizzle with ranch dressing.

Notes

For extra flavor, add a squeeze of lime before serving.
