Chipotle & Adobo

  • 2 minced canned chipotle chilis plus 2 tablespoons of the adobo sauce
  • 0.25 cup adobo sauce

Dairy & Citrus

  • 0.5 cup low fat Greek yogurt (or sour cream)
  • 1 lime lime

Tortillas & Cheese

  • 4 soft taco size flour tortillas (whole wheat or white)
  • 2 cups freshly shredded Monterey Jack cheese

Other

  • as needed olive oil for frying

Instructions 

  • Toss chicken with 1/2 tsp salt and spices; cook in a skillet until done. Sauté peppers and onions, then combine with chicken, cilantro, chipotle chilis, and adobo sauce.
  • Mix Greek yogurt with lime juice, remaining salt, and adobo sauce; set aside.
  • Assemble quesadillas: sprinkle cheese on tortillas, add chicken mixture, top with cheese, then fold.
  • Cook quesadillas in oiled skillet 3-4 minutes per side until crispy and cheese melts. Rest, then cut into thirds and serve with cilantro and yogurt sauce.

Notes

Use fresh ingredients for best flavor. Adjust spice levels to taste.
