How to Make Maple Dijon Chicken

Now that we have our ingredients ready, let’s walk through the steps to make this delightful dish:

Common Mistakes and Troubleshooting

Even the best cooks encounter hiccups. Here are some pitfalls to avoid:

Delicious Variations

If you want to switch things up, here are some exciting variations to try:

  • Sheet Pan Maple Dijon Chicken: Roast vegetables alongside the chicken on a sheet pan for a complete meal.
  • Slow Cooker Maple Dijon Chicken: Cook in a slow cooker on low for 6-8 hours for a tender, flavorful dish.

This dish is great for meal prep. Here’s how to store and reheat:

  • Refrigeration: Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Freezing: You can freeze the chicken in the sauce for up to 3 months. Thaw in the refrigerator overnight before reheating.

  5. Now, for the dumpling dough! In a medium bowl, combine 1 cup of flour, 1.5 teaspoons baking powder, and 1 teaspoon pumpkin pie spice. Season with 1/2 teaspoon salt. Add 4 tablespoons grated butter, mixing quickly with your hands. In another bowl, whisk together 1 large egg, 1/3 cup pumpkin puree, and 1/4 cup whole milk. Pro Tips for the Perfect Casserole

Here are some expert insights to ensure your casserole turns out perfectly:

  • Cut Evenly: Make sure your sweet potatoes and Brussels sprouts are cut into similar sizes for even cooking.
  • Don’t Skip the Seasoning: Properly seasoning your chicken and veggies is key to a flavorful dish.
  • Use Fresh Ingredients: Fresh garlic and herbs will amplify the flavors compared to dried versions.
  • Check for Doneness: Use a meat thermometer to ensure the chicken has reached an internal temperature of 165°F.
  • Experiment with Cheeses: Try different cheeses like gouda or mozzarella for a unique twist.
  • Make It Ahead: Prepare your casserole the night before, cover it, and store it in the fridge. Just add a few extra minutes to the baking time!
  • Utilize Leftovers: If you have extra veggies or chicken, throw them in for added flavor and nutrition.
  • Let It Rest: Allow the casserole to sit for a few minutes after taking it out of the oven for easier serving.

  • 1 whole roasting chicken: Fresh is best, but you can use frozen—just be sure to thaw it completely.
  • Fresh herbs (parsley, thyme, rosemary, chives, oregano): A mix of these herbs adds depth of flavor. If you’re short on time, dried herbs can be a substitute.
  • 4 cloves of garlic: Fresh garlic provides a robust flavor that complements the chicken perfectly.
  • Zest and juice of 1 lemon: This adds brightness to the dish; you can substitute lime if you prefer.
  • ½ cup olive oil: This nourishes the chicken and helps achieve a golden brown skin.
  • Sea salt and pepper: Essential for seasoning; don’t shy away from generous amounts to enhance flavor.

Making the Roast Spatchcock Chicken

Now that you have your ingredients ready, it’s time to get cooking. Follow these steps for a delightful roast spatchcock chicken:

  1. Preheat the oven to 375°. This ensures your chicken starts cooking in a hot environment for optimal browning.
  2. Prepare the chicken: Using sharp kitchen shears or a chef’s knife, remove the backbone from the chicken. Don’t throw it away; save it in the freezer for homemade chicken stock later.
  3. Make the herb sauce: In a medium bowl, whisk together the finely minced herbs, garlic, lemon zest and juice, olive oil, salt, and pepper.
  4. Flatten the chicken: Place the chicken skin side up on a parchment-lined sheet tray. Use 2 tablespoons of olive oil, salt, and pepper to season it.
  5. Apply the herb sauce: Drizzle half of the chimichurri-style sauce over the chicken, making sure to cover it well.
  6. Roast the chicken: Put it in the oven skin side up and bake for 50 minutes. Halfway through, flip the pan around to ensure even cooking.
  7. Finish roasting: After 50 minutes, increase the oven temperature to 425° and roast for an additional 15 minutes, or until the skin is golden brown and the chicken is fully cooked.
  8. Serve: Allow the chicken to rest for a few minutes before serving. Drizzle the remaining herb sauce over the chicken for an added burst of flavor.
