A flavorful and creamy skillet dish featuring tender chicken, roasted poblano salsa, and hearty vegetables, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 1.25 pounds boneless skinless chicken breasts (approximately 3 chicken breasts)
  • 1 teaspoon olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • to taste Salt and pepper
  • 4 cups cauliflower rice
  • 1 cup drained and rinsed black beans
  • 1/2 cup drained corn
  • 1 container Nonstick cooking spray
  • 3/4 cup Herdez Roasted Poblano Salsa Cremosa
  • 1/4 cup Chobani Nonfat Plain Greek Yogurt
  • 2 ounces Simple Truth Salsa Verde Protein Tortilla Style Chips

Instructions 

  • Preheat air fryer to 375°F. Rub chicken with oil, garlic, onion, salt, and pepper. Air-fry for 10-14 minutes, then rest and slice.
  • Cook cauliflower rice in a skillet for 5-6 minutes. Add black beans and corn, season, and cook 2-3 minutes.
  • Mix poblano sauce with Greek yogurt, microwave until warm, then stir.
  • Assemble each plate with 5 oz of vegetable mixture, 3.75 oz sliced chicken, 1/4 cup sauce, and crushed chips.

Notes

For extra flavor, roast the poblano peppers before blending into the sauce.
