Ingredients

Protein

  • 1 pound Chicken breasts diced

Marinade

  • 2 tablespoons Olive oil for marinating
  • 3 cloves Garlic minced
  • 2 tablespoons Tomato paste
  • 1 tablespoon Honey
  • 1 teaspoon Chili flakes
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt

Salad

  • 1 each Cucumber diced
  • 1 cup Cherry tomatoes or red bell pepper diced
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil drizzled
  • to taste Salt

Hummus

  • 1 cup Hummus
  • 1 tablespoon Olive oil for drizzling
  • 1 teaspoon Smoked paprika or chili powder

Garnish

  • 2 tablespoons Fresh parsley chopped

Instructions 

  • Marinate chicken with olive oil, garlic, tomato paste, honey, chili flakes, lemon juice, and salt for 15 minutes.
  • Grill or pan-fry the marinated chicken until cooked through, about 10 minutes.
  • Prepare cucumber salad by mixing diced cucumber, cherry tomatoes, lemon juice, olive oil, and salt.
  • Assemble bowls with grilled chicken, cucumber salad, hummus, and garnish with chopped parsley.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
