A quick and flavorful skillet dish combining tender chicken, colorful peppers, and melted provolone cheese for a satisfying meal.

Ingredients

Protein

  • 2 pounds boneless chicken (breast or thighs), sliced thin
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 bell peppers any color, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 8 oz provolone cheese, sliced or shredded

Instructions 

  • Season chicken with salt, pepper, paprika, garlic powder, and cayenne; let sit 15 minutes.
  • Heat 1 tablespoon oil in skillet; cook chicken 5-6 minutes until browned and cooked through. Remove and set aside.
  • Add remaining oil; sauté onions and peppers 4-5 minutes until softened. Add garlic and cook 30 seconds.
  • Return chicken to skillet; toss with vegetables. Top with cheese, cover, and rest 2-3 minutes.

Notes

Use thinly sliced chicken for quick cooking and ensure cheese melts evenly.
