Ingredients

boneless chicken (breast or thighs), sliced thin

Instructions
Season chicken with salt, pepper, paprika, garlic powder, and cayenne; let sit 15 minutes.
Heat 1 tablespoon oil in skillet; cook chicken 5-6 minutes until browned and cooked through. Remove and set aside.
Add remaining oil; sauté onions and peppers 4-5 minutes until softened. Add garlic and cook 30 seconds.
Return chicken to skillet; toss with vegetables. Top with cheese, cover, and rest 2-3 minutes.

Use thinly sliced chicken for quick cooking and ensure cheese melts evenly.
