Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Grains

  • 1 cup quinoa (rinsed)
  • 2 cups water or chicken broth

Seasonings & Oils

  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Avocado & Sauce

  • 1 piece avocado (peeled and pitted)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro (chopped)

Vegetables & Beans

  • 1 cup cherry tomatoes (halved)
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup black beans (rinsed and drained)
  • 1/4 cup red onion (diced)

Instructions 

  • Rinse quinoa and cook in water or broth for 15 minutes, then fluff and set aside.
  • Preheat grill, season chicken with spices and oil, then grill 6-7 minutes per side until cooked through. Rest and slice.
  • Blend avocado, Greek yogurt, lime juice, cilantro, and salt until smooth to make the sauce.
  • Combine cooked quinoa with tomatoes, corn, beans, and red onion in a bowl.
  • Assemble bowls with quinoa mixture, sliced chicken, and drizzle with avocado sauce.

Notes

For extra flavor, marinate chicken with spices before grilling.
