Instructions
Preheat oven to 375℉ (190℃).
Rub chicken with 2 tbsp olive oil, salt, pepper, and Italian seasoning.
Cut a pocket in each chicken and stuff with peppers, cheese, and spinach.
Heat 2 tbsp olive oil in skillet, sear chicken on all sides.
Transfer skillet to oven and bake for 30-40 minutes until cooked through.
