Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 4 tablespoons olive oil (divided)
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon Italian seasoning
  • 1 cup jarred roasted red peppers
  • 4 slices provolone cheese
  • 1 cup packed fresh spinach

Instructions 

  • Preheat oven to 375℉ (190℃).
  • Rub chicken with 2 tbsp olive oil, salt, pepper, and Italian seasoning.
  • Cut a pocket in each chicken and stuff with peppers, cheese, and spinach.
  • Heat 2 tbsp olive oil in skillet, sear chicken on all sides.
  • Transfer skillet to oven and bake for 30-40 minutes until cooked through.

Notes

Ensure chicken is fully cooked before serving.
