A flavorful and easy-to-make chicken wrap with fresh herbs, sun-dried tomatoes, and mozzarella, perfect for a quick lunch or dinner.

Ingredients

Dairy and Herbs

  • 6 tbsp mayonnaise
  • 3 tbsp chopped fresh basil
  • 2 tbsp chopped sun-dried tomatoes
  • 2 tbsp finely grated Parmesan
  • 1 tbsp chopped fresh oregano (or 1 tsp dried oregano)
  • 1 scallion sliced scallion
  • 1 clove garlic, grated

Wraps and Vegetables

  • 4 10" flour wraps flour wraps
  • 1.5 oz packed baby spinach or arugula (about 1.5 cups, divided)
  • 2 cups cooked chopped rotisserie chicken (about 8 oz., divided)
  • 4 oz cherry tomatoes, quartered (divided)
  • 4 oz fresh mozzarella, sliced (divided)

Instructions 

  • Mix mayonnaise, basil, sun-dried tomatoes, Parmesan, oregano, scallion, and garlic until combined.
  • Spread one-quarter of the mayonnaise mixture onto a wrap, leaving a 1" border. Add spinach, chicken, tomatoes, and mozzarella. Fold sides, then roll tightly into a burrito shape. Repeat with remaining ingredients. Slice in half to serve.

Notes

For extra flavor, chill the wraps before serving.
