A quick and flavorful single-serving Tuscan chicken dish with creamy sauce, sun-dried tomatoes, and fresh spinach.

Ingredients

Dredging Mixture

  • 1 tablespoon all purpose flour
  • teaspoon salt
  • teaspoon black pepper

Chicken

  • 1 piece boneless, skinless chicken breast (sliced into ¼ inch strips)

Cooking Base

  • 1 tablespoon olive oil
  • ½ cup chopped onions
  • 1 clove garlic (minced)
  • teaspoon red pepper flakes (optional)

Sauce and Seasonings

  • 1 cup low sodium chicken broth
  • ¼ cup heavy cream
  • 2 tablespoons sun-dried tomatoes (packed in oil)
  • 1 teaspoon tomato paste
  • ¼ teaspoon Italian seasoning

Cheese and Greens

  • 2 tablespoons grated Parmesan cheese
  • 1 cup fresh spinach (packed)
  • 2-3 leaves fresh basil (torn)

Instructions 

  • Mix flour, salt, and pepper; coat chicken strips.
  • Heat oil; cook chicken 3 minutes per side until browned. Remove and set aside.
  • Sauté onions 2 minutes; add garlic and red pepper flakes, cook 30 seconds.
  • Deglaze with broth; add cream, sun-dried tomatoes, tomato paste, and Italian seasoning. Simmer 3-5 minutes until thickened.
  • Stir in Parmesan and spinach; return chicken to warm through. Top with basil before serving.

Notes

For a creamier sauce, add more heavy cream as needed.
