Ingredients

  • 2 cups shredded leftover turkey
  • 1 cup diced white onion
  • 1 small orange bell pepper, diced
  • 1 clove garlic, minced
  • 1 cup fresh baby spinach
  • 1/2 cup whole milk Greek yogurt
  • 1/2 cup shredded Monterrey Jack cheese
  • 1/4 cup cilantro leaves, chopped
  • 1/3 cup red enchilada sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • to taste salt and pepper
  • 8 pieces flour tortillas
  • 2 1/3 cups red enchilada sauce, divided
  • 1 1/2 cups shredded Monterey Jack cheese

Instructions 

  • Preheat oven to 400°F (200°C). Grease a 9x13 baking dish.
  • Sauté onion, bell pepper, and garlic in oil until tender; add spinach and cook briefly.
  • Mix turkey, sautéed vegetables, yogurt, cheeses, cilantro, enchilada sauce, spices, lime juice, salt, and pepper.
  • Warm tortillas, dip in sauce, fill with mixture, roll, and place in dish. Repeat with all tortillas.
  • Top with remaining sauce and cheese, then bake for 15-20 minutes until golden and bubbly.

Notes

For best results, serve garnished with extra cilantro and lime wedges.
