Instructions
Preheat oven to 400°F (200°C). Grease a 9x13 baking dish.
Sauté onion, bell pepper, and garlic in oil until tender; add spinach and cook briefly.
Mix turkey, sautéed vegetables, yogurt, cheeses, cilantro, enchilada sauce, spices, lime juice, salt, and pepper.
Warm tortillas, dip in sauce, fill with mixture, roll, and place in dish. Repeat with all tortillas.
Top with remaining sauce and cheese, then bake for 15-20 minutes until golden and bubbly.
Notes
For best results, serve garnished with extra cilantro and lime wedges.
