Instructions
Chop chicken into bite-sized pieces; dice bell peppers, mince garlic and ginger.
Heat oil in a skillet; sauté garlic and ginger until fragrant (~30 seconds).
Add chicken and cook until golden (~5-7 minutes).
Stir in curry paste, add coconut milk, fish sauce, sugar, and lime juice; simmer gently.
Add bell peppers; simmer 10 minutes until tender. Stir in basil before serving.
Notes
Use fresh basil for best flavor and adjust spice level with curry paste.
