A flavorful and colorful Thai-inspired dish featuring tender chicken, fresh vegetables, and a creamy peanut sauce served over rice or noodles.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon red pepper flakes (optional)

Peanut Sauce

  • 0.5 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons sriracha (adjust to taste)
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 0.25 cup warm water (as needed to thin sauce)

Vegetables & Grains

  • 2 cups cooked jasmine rice or rice noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup chopped cucumber
  • 0.5 cup edamame (optional)
  • 0.5 cup shredded purple cabbage
  • 0.25 cup chopped cilantro
  • 0.25 cup chopped peanuts for garnish

Garnishes & Sides

  • Lime wedges (for serving)
  • Sliced green onions (for garnish)

Instructions 

  • Mix soy sauce, lime juice, sesame oil, garlic powder, ginger, and red pepper flakes in a bowl. Toss chicken in marinade and refrigerate for 15 minutes.
  • Whisk peanut butter, soy sauce, lime juice, honey, rice vinegar, sesame oil, sriracha, ginger, and garlic. Gradually add warm water until smooth.
  • Cook marinated chicken in a skillet over medium-high heat for 5-7 minutes until golden and cooked through.
  • Divide rice or noodles into bowls, top with vegetables and chicken, then drizzle with peanut sauce. Garnish with peanuts, green onions, cilantro, and serve with lime wedges.

Notes

Adjust sriracha to taste for spiciness.
