Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts or thighs
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk or regular milk
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped peanuts for garnish
  • 2 tablespoons chopped fresh cilantro for garnish

Serving

  • as needed Steamed rice or noodles for serving

Instructions 

  • Cook chicken in vegetable oil until browned and cooked through.
  • In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil.
  • Pour sauce over cooked chicken and simmer for a few minutes.
  • Garnish with chopped peanuts and cilantro, then serve over steamed rice or noodles.

Notes

Adjust sriracha for desired spice level.
