Ingredients

Protein

  • 1 lb boneless, skinless chicken breast (diced)

Vegetables

  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)

Carbohydrate

  • 1 cup cooked rice or noodles (your choice)

Sauces

  • 0.25 cup sweet chili sauce
  • 2 tablespoons soy sauce

Cooking Oil

  • 1 tablespoon vegetable oil

Aromatics

  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

Instructions 

  • Dice the chicken and chop the vegetables. Cook rice or noodles as per package instructions.
  • Heat vegetable oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes until browned and cooked through.
  • Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant. Toss in vegetables and stir-fry for 3-5 minutes until tender yet crisp.
  • Pour in sweet chili sauce and soy sauce; stir to coat. Add cooked rice or noodles and toss until heated through.
  • Garnish with sesame seeds and chopped green onions. Serve immediately in bowls.

Notes

For extra flavor, add a splash of lime juice before serving.
