  • 1.75 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup sweet chili sauce (store-bought or homemade)
  • 2 tablespoons soy sauce
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (minced)
  • 2 tablespoons vegetable oil
  • 0.25 cup cornstarch
  • to taste salt and pepper
  • 2 green onions sliced for garnish
  • 1 tablespoon sesame seeds (for garnish)

Serving options

  • Jasmine rice, basmati rice, or noodles (for serving)

Instructions 

  • Mix sweet chili sauce, soy sauce, garlic, and ginger in a bowl. Marinate chicken for 30 minutes.
  • Coat marinated chicken in seasoned cornstarch.
  • Fry chicken in hot oil until golden and cooked through, then drain.
  • Simmer reserved marinade until thickened, then toss chicken in sauce for 2-3 minutes.
  • Garnish with sliced green onions and sesame seeds. Serve hot over rice or noodles.

Notes

For extra flavor, sprinkle additional sesame seeds or chopped green onions before serving.
