A vibrant and flavorful dish featuring tender chicken thighs coated in a sweet and spicy Thai chili sauce, perfect served over jasmine rice.

red bird's eye chillies

(adjust to heat preference)

sweet chilli sauce
(prefer Blue Dragon)

light soy sauce

rice vinegar

juice of 1 lime

Instructions
Toss chicken with cornflour and white pepper to coat evenly.
Whisk together garlic, ginger, chillies, sweet chilli sauce, soy sauce, honey, rice vinegar, sesame oil, and lime juice to make the sauce.
Heat oil in a pan, cook chicken until golden and cooked through, then set aside.
Sauté bell peppers and white parts of spring onions for 2-3 minutes.
Pour sauce into pan, simmer for 2-3 minutes until thickened, then add chicken back and toss to coat. Cook for 1 minute.
Remove from heat, stir in green spring onions, garnish with sesame seeds and coriander, and serve over jasmine rice.
Notes
Velveting the chicken helps keep it tender and juicy. Adjust chili to taste for spice level.
