Ingredients

Fruits and Vegetables

  • 3 medium yellow peaches (pitted and diced)
  • 1 red sweet red bell pepper (diced)
  • 0.25 cup red onion (diced)
  • 3 green green onions (finely chopped)
  • 0.5 bunch cilantro (chopped, plus more for garnish)
  • 2 tablespoons lime juice (freshly squeezed, or more for salsa)
  • 0.25 teaspoon chili powder (or more for salsa)
  • 0.25 teaspoon salt (or more to taste for salsa)
  • 1 lb chicken breasts (skinless, boneless, sliced)
  • 0.5 teaspoon smoked paprika (for chicken seasoning)
  • 1 teaspoon chili powder (for chicken seasoning)
  • to taste NA salt (for chicken seasoning)
  • to taste NA black pepper (freshly ground, for chicken seasoning)
  • 2 tablespoons olive oil (for cooking chicken)
  • 2 tablespoons lime juice (from ½ lime, for glaze)
  • 2 tablespoons honey (for glaze)
  • 2 tablespoons salted butter (for finishing chicken)
  • 2 cups cooked jasmine rice
  • 1 lime lime slices (for garnish)

Instructions 

  • Prepare the Peach Salsa: Dice peaches and combine with bell pepper, onion, green onions, cilantro, lime juice, chili powder, and salt. Toss gently and adjust seasoning as needed.
  • Season the chicken slices with salt, pepper, smoked paprika, and chili powder. Sear in olive oil over medium-high heat for 4 minutes per side.
  • Reduce heat, add lime juice and honey, cook for 2 more minutes until glazed. Remove from heat and stir in butter and cilantro.
  • Divide cooked rice into bowls, top with peach salsa and chicken mixture. Garnish with cilantro and lime slices.

Notes

Use fresh ingredients for best flavor and adjust seasoning to taste.
