Ingredients

Chicken

  • 1.5 pounds boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 tablespoon cornstarch or arrowroot powder
  • 1/3 cup tamari or soy sauce
  • 2 tablespoons extra virgin olive oil
  • to taste Black pepper
  • 2 tablespoons orange juice
  • 1/4 cup honey
  • 2-3 tablespoons chili paste
  • 1 tablespoon fresh ginger, chopped
  • 2 cloves garlic, chopped
  • 3-4 cups cooked rice

For Yum Yum Sauce

  • 1/3 cup olive oil mayo
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon cayenne pepper

Instructions 

  • Preheat oven to 425 F (220 C). Toss chicken with tamari and orange juice, season with pepper, sprinkle with cornstarch, drizzle with olive oil, and bake for 15 minutes.
  • Whisk together tamari, orange juice, honey, chili paste, garlic, and ginger to make the sauce.
  • Pour two-thirds of the sauce over baked chicken, toss to coat, bake for 5 more minutes, then broil for 1-2 minutes for char. Spoon remaining sauce if desired.
  • Mix all Yum Yum sauce ingredients in a small bowl. Adjust seasoning if needed.
  • Assemble bowls with rice, chicken, vegetables, and fried wontons. Drizzle with Yum Yum sauce and serve.

Notes

For extra flavor, marinate the chicken longer or add additional vegetables.
