Instructions
Cut a pocket into each chicken breast and season with salt and pepper.
Mix chopped spinach, cream cheese, mozzarella, Parmesan, and garlic to make the filling.
Stuff the spinach mixture into each chicken pocket and secure with toothpicks if needed.
Sear the chicken in olive oil for 3-4 minutes per side until golden, then transfer to a baking dish.
Bake at 375°F (190°C) for 15-18 minutes until fully cooked. Rest for 5 minutes before serving.
