A delicious and flavorful dish featuring tender chicken breasts filled with a creamy spinach mixture, baked to perfection.

Ingredients

Chicken

  • 4 pieces boneless skinless chicken breasts (pounded flat if needed)
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter (optional)

Instructions 

  • Cut a pocket into each chicken breast and season with salt and pepper.
  • Mix chopped spinach, cream cheese, mozzarella, Parmesan, and garlic to make the filling.
  • Stuff the spinach mixture into each chicken pocket and secure with toothpicks if needed.
  • Sear the chicken in olive oil for 3-4 minutes per side until golden, then transfer to a baking dish.
  • Bake at 375°F (190°C) for 15-18 minutes until fully cooked. Rest for 5 minutes before serving.

Notes

Use toothpicks to secure the stuffed chicken if needed, and ensure it is cooked through before serving.
