A comforting and flavorful one-pan dish combining tender chicken, sautéed mushrooms, fresh spinach, and orzo pasta, perfect for cozy family dinners.

Ingredients

Protein

  • 1 lb boneless skinless chicken breasts or thighs

Pasta

  • 1 cup orzo pasta

Broth

  • 2.5 cups chicken broth

Oils & Aromatics

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced

Vegetables

  • 1 cup sliced mushrooms
  • 3-4 cups fresh spinach

Seasonings & Cheese

  • to taste salt and freshly ground black pepper
  • pinch red pepper flakes
  • 1 teaspoon dried oregano or Italian seasoning
  • 0.25 cup grated Parmesan cheese

Finish & Garnish

  • fresh lemon juice/zest lemon juice or zest (optional)

Instructions 

  • Cook chicken in 2 tbsp olive oil until browned, then set aside.
  • Sauté onion and garlic in the same skillet until fragrant.
  • Add mushrooms and cook until tender, then toast orzo for 1 minute.
  • Pour in broth with oregano, simmer until orzo is tender, then return chicken and spinach, cook until spinach wilts.
  • Stir in Parmesan, season with salt and pepper, then serve with lemon zest or juice.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
