Broth

Instructions
Cook chicken in 2 tbsp olive oil until browned, then set aside.
Sauté onion and garlic in the same skillet until fragrant.
Add mushrooms and cook until tender, then toast orzo for 1 minute.
Pour in broth with oregano, simmer until orzo is tender, then return chicken and spinach, cook until spinach wilts.
Stir in Parmesan, season with salt and pepper, then serve with lemon zest or juice.
Notes
For extra flavor, add a squeeze of fresh lemon before serving.
