Instructions
Season chicken with basil, garlic powder, salt, and pepper.
Heat ghee/oil and sear chicken 6-8 mins per side until cooked. Set aside.
Sauté garlic and onion in the same skillet for 1-2 mins.
Whisk in broth, coconut milk, lemon juice, arrowroot, salt, and pepper. Simmer 2-3 mins until thickened.
Add artichokes and spinach, cook until spinach wilts. Return chicken and spoon sauce over.
Garnish with red pepper flakes and serve hot.
Notes
Ensure not to overcook the chicken to keep it tender and juicy.
