0.75cupnatural peanut butter
3tablespoonssoy sauce
2tablespoonslime juice
1tablespoonhoney or maple syrup
2clovesgarlic minced
1teaspoonfreshly grated ginger
0.5teaspoonchili garlic sauce or sriracha

2cupscooked jasmine rice

1slicedavocado
1cupshredded red cabbage
0.25cupchopped fresh cilantro

1tablespoonsesame seeds (optional)
2tablespoonswater to thin sauce if needed
Instructions
Whisk together peanut butter, soy sauce, lime juice, honey, garlic, ginger, chili garlic sauce, and water until smooth. Reserve some sauce for serving.
Marinate chicken thighs in the remaining sauce for at least 30 minutes.
Cook chicken on a medium-high grill or skillet for 5-6 minutes per side until cooked through and lightly charred. Rest and slice.
Cook jasmine rice according to package instructions. Fluff and keep warm.
Prepare toppings: dice mango, slice avocado, shred cabbage, and chop cilantro.
Assemble bowls with rice as a base, then top with chicken, mango, avocado, cabbage, cilantro, and drizzle with reserved peanut sauce. Sprinkle sesame seeds if using. Serve warm.
Notes
For extra flavor, marinate the chicken longer or add a squeeze of lime before serving.
