A vibrant and flavorful bowl combining tender chicken, fresh fruits, and crunchy vegetables, all drizzled with a spicy peanut sauce.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken thighs

Sauce

  • 0.75 cup natural peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic minced
  • 1 teaspoon freshly grated ginger
  • 0.5 teaspoon chili garlic sauce or sriracha

Carbohydrates

  • 2 cups cooked jasmine rice

Fruits & Vegetables

  • 1 diced mango
  • 1 sliced avocado
  • 1 cup shredded red cabbage
  • 0.25 cup chopped fresh cilantro

Garnish & Toppings

  • 1 tablespoon sesame seeds (optional)
  • 2 tablespoons water to thin sauce if needed

Instructions 

  • Whisk together peanut butter, soy sauce, lime juice, honey, garlic, ginger, chili garlic sauce, and water until smooth. Reserve some sauce for serving.
  • Marinate chicken thighs in the remaining sauce for at least 30 minutes.
  • Cook chicken on a medium-high grill or skillet for 5-6 minutes per side until cooked through and lightly charred. Rest and slice.
  • Cook jasmine rice according to package instructions. Fluff and keep warm.
  • Prepare toppings: dice mango, slice avocado, shred cabbage, and chop cilantro.
  • Assemble bowls with rice as a base, then top with chicken, mango, avocado, cabbage, cilantro, and drizzle with reserved peanut sauce. Sprinkle sesame seeds if using. Serve warm.

Notes

For extra flavor, marinate the chicken longer or add a squeeze of lime before serving.
