A flavorful and spicy Thai-inspired chicken dish with rich peanut sauce, perfect served over jasmine rice.

Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breast
  • 2 tbsp cornstarch
  • 0.5 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp honey
  • 0.5 tsp red pepper flakes
  • 1 13.5 fl oz can coconut milk
  • 0.75 cup chicken stock
  • 2 red bell peppers red bell peppers, cored and thinly sliced
  • 1 shallot shallot, thinly sliced
  • 1 red Fresno chile pepper Fresno chile, finely diced
  • 6 garlic cloves garlic, minced
  • 1 tbsp minced fresh ginger
  • 1 4-inch piece lemongrass, smashed
  • 2 limes limes, juiced
  • 0.5 cup toasted peanuts, chopped
  • 4 scallions scallions, thinly sliced
  • 1 handful cilantro leaves

  • kosher salt (to taste)
  • neutral oil (for cooking)

Instructions 

  • Cut chicken into pieces, coat with cornstarch and salt.
  • Whisk peanut butter, soy sauce, fish sauce, honey, and red pepper flakes; slowly add coconut milk and chicken stock.
  • Cook chicken in hot oil until browned, then set aside. Sauté peppers, shallot, Fresno chile, garlic, ginger, and lemongrass.
  • Pour in sauce, simmer, add chicken, and cook until done. Finish with lime juice.
  • Serve over rice, topped with peanuts, scallions, cilantro, and extra lime juice.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
