Instructions
Cut chicken into pieces, coat with cornstarch and salt.
Whisk peanut butter, soy sauce, fish sauce, honey, and red pepper flakes; slowly add coconut milk and chicken stock.
Cook chicken in hot oil until browned, then set aside. Sauté peppers, shallot, Fresno chile, garlic, ginger, and lemongrass.
Pour in sauce, simmer, add chicken, and cook until done. Finish with lime juice.
Serve over rice, topped with peanuts, scallions, cilantro, and extra lime juice.
Notes
Adjust seasoning to taste and serve immediately for best flavor.
