Ingredients

Sauces and liquids

  • 1 cup Creamy peanut butter
  • 0.25 cup Tamari or soy sauce (Use tamari for gluten-free)
  • 0.5 cup Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Toasted sesame oil
  • 2 tablespoons Thai red curry paste (Adjust for spice level)
  • 1 tablespoon Fresh ginger, grated
  • 0.25 teaspoon Cayenne pepper (Optional)

Grains

  • 1 cup Short-grain brown rice
  • 0.5 teaspoon Kosher salt (Adjust to taste)

Cooking oils

  • 2 tablespoons Coconut oil

Vegetables

  • 1 medium Red bell pepper, sliced
  • 0.5 teaspoon Freshly ground black pepper
  • 1 pound Ground chicken
  • 3 cloves Garlic, minced
  • 2 stalks Scallions, sliced (Reserve some for garnish)
  • 1 cup Red cabbage, finely shredded
  • 1 cup Shredded carrot
  • 0.25 cup Chopped fresh Thai basil leaves (For garnish)
  • 0.25 cup Chopped roasted peanuts (For garnish)

Instructions 

  • Cook the brown rice according to package instructions.
  • Whisk together peanut butter, tamari, water, rice vinegar, sesame oil, curry paste, ginger, and cayenne to make the sauce.
  • Heat coconut oil in a pan, cook ground chicken with garlic, salt, black pepper, and cayenne until browned.
  • Add sliced bell pepper, red cabbage, and shredded carrot; cook until vegetables are tender.
  • Combine cooked rice, chicken, and vegetables; toss with sauce. Garnish with scallions, Thai basil, and peanuts before serving.

Notes

Adjust spice level by adding more or less curry paste and cayenne pepper.
