A flavorful and spicy noodle dish featuring tender chicken, crunchy vegetables, and a creamy peanut sauce.

Ingredients

Noodles

  • 12 ounces rice noodles
  • 2 teaspoons sesame oil
  • 1 pound ground chicken
  • 2 green onions green onions, thinly sliced, white parts only
  • 4 cloves garlic, minced
  • 1 red bell pepper red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 0.25 cup natural peanut butter
  • 0.25 cup soy sauce
  • 0.25 cup water
  • 2 tablespoons chili paste
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 0.25 cup peanuts, roughly chopped (to serve, optional)

Instructions 

  • Bring a large pot of water to a boil, cook rice noodles until tender, then drain.
  • Whisk peanut butter, soy sauce, water, chili paste, honey, and rice vinegar until combined; set aside.
  • Cook ground chicken in sesame oil over medium-high heat for 4-5 minutes, breaking it apart.
  • Add sliced green onion white parts, garlic, bell pepper, and carrots; cook 2-3 minutes until vegetables are tender.
  • Combine noodles with chicken and vegetables in the pan, pour sauce over, and toss to coat. Adjust seasoning as needed.
  • Serve immediately, garnished with chopped peanuts and green onions if desired.

Notes

For a creamier sauce, blend the sauce mixture before adding to the noodles.
