Instructions
Bring a large pot of water to a boil, cook rice noodles until tender, then drain.
Whisk peanut butter, soy sauce, water, chili paste, honey, and rice vinegar until combined; set aside.
Cook ground chicken in sesame oil over medium-high heat for 4-5 minutes, breaking it apart.
Add sliced green onion white parts, garlic, bell pepper, and carrots; cook 2-3 minutes until vegetables are tender.
Combine noodles with chicken and vegetables in the pan, pour sauce over, and toss to coat. Adjust seasoning as needed.
Serve immediately, garnished with chopped peanuts and green onions if desired.
Notes
For a creamier sauce, blend the sauce mixture before adding to the noodles.
