Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken thighs

Sauces & liquids

  • 0.75 cup pure maple syrup
  • 2 tbsp soy sauce
  • 2 tbsp sriracha
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 0.5 tsp smoked paprika

Seasonings

  • to taste Salt and pepper

Garnishes

  • Fresh cilantro and lime wedges

Rice & Coconut Milk

  • 1 cup jasmine rice
  • 1 cup full-fat coconut milk
  • 0.75 cup water
  • 0.5 tsp salt

Instructions 

  • Whisk together maple syrup, soy sauce, sriracha, vinegar, olive oil, garlic, smoked paprika, salt, and pepper.
  • Marinate chicken thighs for at least 30 minutes in the refrigerator.
  • Cook rice with coconut milk, water, and salt until tender, about 15-18 minutes.
  • Cook chicken in a skillet over medium heat for 5-6 minutes per side until browned and cooked through. Rest and slice.
  • Serve sliced chicken over coconut rice, garnished with cilantro and lime wedges.

Notes

Marinate the chicken for at least 30 minutes for best flavor. Adjust spice levels to taste.
