Instructions
Whisk together maple syrup, soy sauce, sriracha, vinegar, olive oil, garlic, smoked paprika, salt, and pepper.
Marinate chicken thighs for at least 30 minutes in the refrigerator.
Cook rice with coconut milk, water, and salt until tender, about 15-18 minutes.
Cook chicken in a skillet over medium heat for 5-6 minutes per side until browned and cooked through. Rest and slice.
Serve sliced chicken over coconut rice, garnished with cilantro and lime wedges.
Notes
