Ingredients

Protein

  • 1.5 pounds chicken thighs, boneless and skinless

Sauces and oils

  • 3 tablespoons gochujang Korean red chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar

Aromatics

  • 3 cloves garlic, minced
  • 1 inch ginger, grated

Vegetables

  • 1 onion onion, sliced
  • 1 bell pepper sliced
  • 1 carrot julienned

Additional

  • 1 teaspoon sesame seeds
  • 2 green onions chopped
  • 1 tablespoon rice vinegar

Instructions 

  • Cut chicken into bite-sized pieces and prepare marinade with gochujang, soy sauce, sesame oil, sugar, garlic, ginger, and rice vinegar.
  • Marinate chicken for at least 30 minutes, then cook in a skillet until slightly charred and cooked through, about 10-12 minutes.
  • Add sliced onion, bell pepper, and carrot; stir-fry for 5 minutes until vegetables are tender-crisp.
  • Garnish with sesame seeds and chopped green onions before serving.

Notes

For extra flavor, marinate the chicken overnight.
