Ingredients

Vegetables

  • 1-2 large sweet potatoes (peeled and cut into 1-inch cubes)
  • 1.5 lbs boneless, skinless chicken thighs (cut into 2-inch pieces)
  • 1 large sweet onion (cut into 1.5-inch chunks and layers separated)
  • 7 bamboo skewers bamboo skewers
  • to taste fresh basil (optional, thinly sliced for garnish)
  • 3 Tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.25 tsp crushed red pepper
  • 6 Tbsp honey
  • 2 tsp apple cider vinegar

Instructions 

  • Boil sweet potato cubes for 5 minutes, then drain and cool.
  • Mix olive oil with spices and combine honey with vinegar to make glazes.
  • Toss chicken with half of spice mix; coat potatoes and onions with remaining spices.
  • Thread chicken, sweet potatoes, and onions onto skewers; brush with half of honey glaze.
  • Grill skewers for about 8 minutes, turning frequently; brush with remaining honey glaze before serving.

Notes

Soak skewers before grilling to prevent burning and serve with fresh basil for extra flavor.
