Ingredients

Protein

  • 1 lb Boneless, skinless chicken thighs

Cooking Oil

  • 2 tablespoons Olive oil
  • 1 tablespoon Coconut oil or any cooking oil

Aromatics

  • 4 cloves Garlic, minced

Spices & Sauces

  • 1 teaspoon Red pepper flakes (Adjust to taste)
  • 1 tablespoon Soy sauce
  • to taste Salt
  • to taste Pepper

Rice & Liquids

  • 1 cup Jasmine rice
  • 2 cups Water

Creamy Chili Sauce

  • ½ cup Mayonnaise
  • 2 tablespoons Chili paste (Adjust to taste)
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey (optional) (to taste)

Fresh herbs & Garnishes

  • to taste Fresh cilantro, chopped
  • to taste Sliced green onions
  • to taste Lime wedges

Instructions 

  • Cook jasmine rice with water until tender, about 15 minutes.
  • While rice cooks, heat oil and cook chicken thighs until browned and cooked through, about 8-10 minutes. Add garlic and red pepper flakes, cook for 1 minute.
  • Mix mayonnaise, chili paste, lime juice, and honey to make the creamy chili sauce.
  • Assemble bowls with rice, sliced chicken, and drizzle with chili sauce. Garnish with cilantro, green onions, and lime wedges.

Adjust spice levels and garnishes to taste for best flavor.
