Ingredients

Protein

  • 1 lb Boneless, skinless chicken thighs

Grains

  • 2 cups Cooked rice white or brown

Vegetables

  • 1 cup Broccoli florets
  • 1 medium Red bell pepper, sliced
  • 1 medium Carrot, julienned

Aromatics & Sauces

  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, minced
  • 2 tablespoons Soy sauce
  • 2 tablespoons Chili garlic sauce
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil

Garnish

  • 2 stalks Green onions, chopped
  • Sesame seeds for garnish Sesame seeds (Optional)

Instructions 

  • Cook the rice according to package instructions and set aside.
  • Heat vegetable oil in a pan, cook chicken thighs until browned and cooked through, then slice.
  • Stir-fry broccoli, bell pepper, and carrot until tender-crisp.
  • Mix garlic, ginger, soy sauce, chili garlic sauce, honey, rice vinegar, and sesame oil to make the sauce.
  • Combine cooked rice, vegetables, chicken, and sauce. Garnish with green onions and sesame seeds.

Notes

For extra spice, add more chili garlic sauce or garnish with additional chili flakes.
