Ingredients

Meat

  • 1.5 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 0.5 teaspoon turmeric
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 large tomato (diced)
  • 1 can 13.5 oz coconut milk
  • 0.5 cup chicken broth
  • 1 tablespoon lime juice
  • 0.25 cup chopped fresh cilantro (plus more for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until fragrant.
  • Add chicken pieces and cook until browned.
  • Stir in spices, diced tomato, coconut milk, chicken broth, and lime juice. Simmer for 20 minutes.
  • Garnish with chopped cilantro before serving.
