Instructions
Heat olive oil in a skillet, cook chicken until browned, then set aside.
Sauté onion and bell pepper, add garlic, chipotle, adobo sauce, and paprika; cook until fragrant.
Add rice, toast for 1-2 minutes to deepen flavor.
Pour in broth and BBQ sauce, return chicken, bring to boil, then simmer covered for 20-25 minutes.
Sprinkle cheese, cover until melted, garnish with green onions or cilantro.
Notes
Adjust salt and spice levels to taste. For extra flavor, garnish with fresh herbs.
