Ingredients

Protein

  • 1 lb boneless skinless chicken breast, diced
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 red red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 chipotle pepper in adobo finely chopped
  • 1 tablespoon adobo sauce from the chipotle can
  • ½ teaspoon smoked paprika
  • to taste Salt and pepper
  • 1 cup long grain white rice
  • 1 ¾ cups chicken broth
  • ½ cup BBQ sauce
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped green onions or cilantro (optional for garnish)

Instructions 

  • Heat olive oil in a skillet, cook chicken until browned, then set aside.
  • Sauté onion and bell pepper, add garlic, chipotle, adobo sauce, and paprika; cook until fragrant.
  • Add rice, toast for 1-2 minutes to deepen flavor.
  • Pour in broth and BBQ sauce, return chicken, bring to boil, then simmer covered for 20-25 minutes.
  • Sprinkle cheese, cover until melted, garnish with green onions or cilantro.

Notes

Adjust salt and spice levels to taste. For extra flavor, garnish with fresh herbs.
