Instructions
Add potatoes, carrots, celery, onion, garlic, salt, parsley, Italian seasoning, and pepper to slow cooker and stir.
Mix broth and cornstarch, then add to slow cooker with cream.
Place chicken in liquid, cover, and cook on low for 6-7 hours until tender.
Remove chicken, shred, then stir back into stew with peas and Parmesan. Adjust seasonings and serve.
Notes
For a thicker stew, cook uncovered for the last 30 minutes.
