A flavorful and easy-to-make chicken dish featuring bright orange and tart cranberries, perfect for a cozy dinner.

Ingredients

Dried ingredients

  • 0.25 cup all-purpose flour (can also use gluten-free all-purpose flour)
  • 0.25 tsp seasoned salt
  • 24 oz chicken breasts (boneless, skinless)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 0.33 cup sweet onion (very finely chopped)
  • 2 cloves garlic (minced)
  • 0.5 cup orange juice (freshly squeezed, or not from concentrate juice)
  • 1 tsp chicken bouillon (*see notes)
  • 1 cup whole berry cranberry sauce (*see notes)
  • 0.25 tsp paprika

Optional garnish

  • fresh parsley (for garnish)

Instructions 

  • Pound chicken breasts to even thickness, then coat with seasoned flour.
  • Heat butter and olive oil in a skillet, cook chicken 4 minutes per side until browned.
  • Add garlic and onions, cook until soft, then stir in orange juice, chicken bouillon, cranberry sauce, and paprika.
  • Reduce heat, cover, and simmer for 20 minutes until chicken reaches 165°F internal temperature.
  • Uncover and cook 2-3 minutes more to thicken sauce, then serve garnished with parsley if desired.

Notes

For a thicker sauce, cook uncovered for a few additional minutes.
