A flavorful one-pan dish combining tender chicken, fragrant garlic, and perfectly cooked rice for a satisfying meal.

Ingredients

Protein

  • 1 pound chicken tenderloins or thin chicken breasts
  • 1.5 cups long grain white rice
  • 4 cups chicken broth or stock (divided)
  • 1 medium onion (diced fine, about 1 cup)
  • 4 garlic cloves garlic (minced)
  • 2 teaspoons garlic powder (divided)
  • 2 teaspoons salt (divided)
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon onion powder
  • 0.5 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions 

  • Heat olive oil in a skillet over medium heat. Cook diced onion with 1/2 teaspoon salt until translucent (~5-6 min).
  • Add minced garlic and cook until fragrant (~1-2 min). Stir in rice and toast for 2 min.
  • Season chicken with garlic powder, salt, paprika, onion powder, and pepper. Nestle into rice.
  • Add 3 cups chicken broth, bring to boil, then cover and simmer 20 min without lifting lid.
  • Stir, add remaining broth, salt, garlic powder, red pepper flakes, cover, and cook 10-15 min until rice is tender.
  • Rest 5 min, then serve garnished with parsley if desired.

Notes

Ensure not to lift the lid during cooking to keep the steam trapped for perfect rice.
