Instructions
Heat olive oil in a skillet over medium heat. Cook diced onion with 1/2 teaspoon salt until translucent (~5-6 min).
Add minced garlic and cook until fragrant (~1-2 min). Stir in rice and toast for 2 min.
Season chicken with garlic powder, salt, paprika, onion powder, and pepper. Nestle into rice.
Add 3 cups chicken broth, bring to boil, then cover and simmer 20 min without lifting lid.
Stir, add remaining broth, salt, garlic powder, red pepper flakes, cover, and cook 10-15 min until rice is tender.
Rest 5 min, then serve garnished with parsley if desired.
Notes
Ensure not to lift the lid during cooking to keep the steam trapped for perfect rice.
