A vibrant and crunchy salad featuring grilled sesame chicken, fresh vegetables, and a flavorful sesame ginger dressing, perfect as a main or side dish.

Ingredients

For the chicken

  • 1 batch Grilled Sesame Chicken

For the salad

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 0.5 cup diced green onion
  • 0.75 cup freshly diced cilantro
  • 1 cup shredded carrots (bagged or matchsticks)
  • 1 red bell pepper (thinly julienned)
  • 1 jalapeno jalapeno (seeded and diced)

For the dressing

  • 1 batch Sesame Ginger Dressing

For serving

  • 0.33 cup toasted sliced almonds
  • 0.33 cup roasted cashews halves
  • to taste Sesame seeds
  • to taste Extra cilantro
  • to taste Extra green onion
  • a few jalapeƱo slices
  • optional Crispy wonton strips (for added crunch)

Instructions 

  • Marinate and grill the sesame chicken as per the recipe.
  • Prepare the sesame ginger dressing and set aside.
  • Combine cabbage, green onion, cilantro, carrots, bell pepper, and jalapeno in a large bowl. Toss with dressing.
  • Serve the salad on a platter, garnished with almonds, cashews, sesame seeds, cilantro, green onion, jalapeno slices, and optional wonton strips.

Notes

Feel free to add crispy wonton strips for extra crunch or adjust garnishes to taste.
