Ingredients

Chicken

  • 4 large boneless, skinless chicken breasts
  • 0.5 cup cream cheese (softened)
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 2 tablespoons mayonnaise
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon red pepper flakes (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut a pocket into each chicken breast without piercing through completely.
  • Mix spinach, cream cheese, Parmesan, mozzarella, mayonnaise, Italian seasoning, and red pepper flakes to make the filling.
  • Stuff the filling into the chicken pockets, secure with toothpicks, then season the outside with olive oil, garlic powder, salt, and pepper.
  • Bake for 25-30 minutes until internal temperature reaches 165°F (74°C). Let rest before serving.

Notes

Secure the stuffed chicken with toothpicks to prevent filling leakage during baking.
