Ingredients

Protein

  • 1.5 lb boneless, skinless chicken thighs (can substitute with chicken breasts)
  • 2 tbsp olive oil (enhances flavor)
  • 2 tsp smoked paprika (adds smoky depth)
  • 1.5 tsp garlic powder (for aromatic punch)
  • 1 tsp onion powder (boosts overall flavor)
  • 1 tsp ground cumin (provides warm flavor)
  • 1 tsp dried oregano (brightens taste)
  • 1 tsp salt (essential for flavor)
  • 0.5 tsp black pepper (brings flavors together)
  • 0.5 tsp chili powder (optional for heat)
  • 2 cups cooked white rice (hearty base)
  • 1 tbsp lemon juice (balances flavors)
  • 1 tbsp fresh cilantro (for finishing touch)
  • 1 can 15 oz black beans (rinsed and warmed)

Salsas and Guacamole

  • 1 batch Roasted Corn Salsa (or store-bought)
  • 1 batch Fresh Tomato Salsa (or store-bought)
  • 1 batch Guacamole (or store-bought)

Instructions 

  • Whisk together olive oil, smoked paprika, garlic powder, onion powder, cumin, oregano, salt, black pepper, and chili powder to make a marinade.
  • Toss chicken in the spice mixture until fully coated.
  • Cook chicken in a skillet over medium-high heat for 5-6 minutes per side until browned and cooked through. Rest, then dice into bite-sized pieces.
  • Heat rice in microwave, stir in lemon juice, cilantro, and a pinch of salt.
  • Layer bowls with rice, black beans, chicken, corn salsa, tomato salsa, and guacamole. Serve with lime wedges.
