Instructions
Cook rice according to package instructions.
Sauté chopped onion and garlic in olive oil until fragrant.
Add ground chicken, cook until browned, then mix in cooked rice, chopped vegetables, olives, feta, herbs, salt, and pepper.
Cut tops off bell peppers and remove seeds. Stuff peppers with the filling.
Steam stuffed peppers in water for about 15-20 minutes until tender. Serve with lemon wedges.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
