Ingredients

Chicken

  • 4 pieces chicken breasts
  • 1 cup ricotta cheese
  • 0.5 cup fresh spinach, chopped
  • 0.25 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix ricotta, spinach, Parmesan, garlic, parsley, oregano, salt, and pepper.
  • Slice chicken breasts in half to create pockets and stuff with the ricotta mixture.
  • Heat olive oil in skillet and sear chicken rolls 3-4 minutes per side.
  • Transfer skillet to oven and bake 20-25 minutes until cooked through.

Notes

Secure stuffed chicken with toothpicks if needed to prevent filling from spilling out.
