Instructions
Heat olive oil in a pan over medium heat.
Add garlic and onion, sauté until fragrant.
Mix spices and add to the pan.
Add beans, corn, chicken, chiles, broth, salsa, and rice. Mix well.
Bring to a boil, then simmer for 15 minutes with lid on.
Top with cheese, cover to melt, then garnish with cilantro and toppings.
Notes
For extra flavor, let the dish sit for a few minutes before serving.
