Ingredients

Sweet Potatoes

  • 2 large sweet potatoes (diced into 1/2-inch cubes)

Onion

  • 1 large onion (sliced into 1/2-inch thick wedges)

Olive Oil

  • 1.5 tbsp olive oil

Salt

  • 0.5 tsp salt

Garlic Powder

  • 0.75 tsp garlic powder

Chipotle Powder

  • 0.75 tsp chipotle powder

Broccoli

  • 1 head broccoli (cut into small 1-inch florets)

Olive Oil

  • 1 tbsp olive oil

Salt

  • 0.5 tsp salt

Lime Juice

  • 1 tbsp lime juice (for finishing)

Chicken Breasts

  • 1 lb chicken breasts (left whole for shredding)

BBQ Sauce

  • 2/3 cup BBQ sauce

Black Pepper

  • 0.25 tsp black pepper

Instructions 

  • Roast sweet potatoes and broccoli with olive oil, salt, garlic, and chipotle powder at 400°F (200°C) for 25-30 minutes.
  • Cook chicken breasts until fully cooked, then shred into pieces.
  • Mix shredded chicken with BBQ sauce.
  • Assemble bowls with roasted sweet potatoes, broccoli, shredded BBQ chicken, and a squeeze of lime juice.
  • Serve immediately and enjoy!

Notes

For extra flavor, marinate the chicken in BBQ sauce before cooking.
