Instructions
Prepare all ingredients: cut chicken, dice onion, measure oils and sauces.
Heat sesame oil and neutral oil in a wok over medium-high heat until shimmering.
Stir-fry chicken for 5-7 minutes until cooked; remove from pan. Sauté onion and vegetables for 3-4 minutes. Push aside, scramble eggs until cooked. Return chicken, add rice, soy sauce, lemon juice, and butter; mix and heat through.
Serve hot, garnished with sesame seeds if desired.
Notes
Use day-old rice for best results and ensure chicken is fully cooked.
