A quick and flavorful homemade chicken fried rice that mimics restaurant quality with simple ingredients and techniques.

Ingredients

Protein

  • 0.75 pound chicken breasts

Grains

  • 4 cups cooked rice

Sauces & Oils

  • 5 tablespoons low-sodium soy sauce
  • 1.5 teaspoons sesame oil
  • 4 teaspoons neutral oil (divided)
  • 4 tablespoons butter (divided)

Vegetables & Aromatics

  • 0.5 cup diced white onion
  • 1 cup frozen mixed vegetables

Eggs & Seasonings

  • 2 large eggs
  • 2 teaspoons fresh lemon juice

Salt & Pepper

  • to taste salt
  • to taste pepper

Garnish

  • optional sesame seeds (for garnish)

Instructions 

  • Prepare all ingredients: cut chicken, dice onion, measure oils and sauces.
  • Heat sesame oil and neutral oil in a wok over medium-high heat until shimmering.
  • Stir-fry chicken for 5-7 minutes until cooked; remove from pan. Sauté onion and vegetables for 3-4 minutes. Push aside, scramble eggs until cooked. Return chicken, add rice, soy sauce, lemon juice, and butter; mix and heat through.
  • Serve hot, garnished with sesame seeds if desired.

Notes

Use day-old rice for best results and ensure chicken is fully cooked.
