Instructions
Season chicken with salt and pepper, marinate in ranch dressing for 5 minutes, then pat dry.
Heat oil in a skillet, sear chicken skin-side down until golden, about 3 minutes, then transfer to a plate.
Add garlic and onion to the skillet, cook 2 minutes, then stir in broth and rice, season with salt and pepper.
Return chicken to the skillet, skin-side up, cover, and simmer until rice is tender and chicken is cooked through, about 20 minutes.
Stir in spinach and parsley, cook until wilted, then serve.
Notes
For extra flavor, sprinkle with additional herbs before serving.
