A flavorful one-pan dish combining tender chicken thighs, creamy ranch, and hearty rice with fresh spinach and herbs.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Freshly ground black pepper

Dressing & Oils

  • 1 cup ranch dressing
  • 2 tablespoons extra-virgin olive oil

Aromatics

  • 3 cloves garlic, minced
  • 1 piece onion, chopped

Broth & Rice

  • 2 cups low-sodium chicken broth
  • 1 cup white rice

Vegetables & Herbs

  • 1 cup baby spinach
  • 0.25 cup chopped parsley

Instructions 

  • Season chicken with salt and pepper, marinate in ranch dressing for 5 minutes, then pat dry.
  • Heat oil in a skillet, sear chicken skin-side down until golden, about 3 minutes, then transfer to a plate.
  • Add garlic and onion to the skillet, cook 2 minutes, then stir in broth and rice, season with salt and pepper.
  • Return chicken to the skillet, skin-side up, cover, and simmer until rice is tender and chicken is cooked through, about 20 minutes.
  • Stir in spinach and parsley, cook until wilted, then serve.

Notes

For extra flavor, sprinkle with additional herbs before serving.
