A delicious and easy meal prep featuring roasted potatoes, seasoned chicken, and broccoli, perfect for a healthy week of lunches.
Ingredients
Potatoes
2lbsrusset potatoes
1/3cupgrated Parmesan
1/2tspgarlic powder
1/4tsppaprika
3Tbspcooking oil, divided
1/2tspsalt, divided
1/4tsppepper
Broccoli
1lbbroccoli florets
Chicken
1lbboneless, skinless chicken breast
1Tbspgarlic herb seasoning
Instructions
Preheat oven to 400ºF (200ºC). Dice potatoes into ¾" pieces.
Mix Parmesan, garlic powder, paprika, and ¼ tsp salt. Toss potatoes with 1 Tbsp oil and seasoned Parmesan. Roast for 30 minutes, stirring halfway.
Toss broccoli with 1 Tbsp oil, ¼ tsp salt, and pepper. Roast for 20 minutes, stirring halfway.
Fillet chicken into thinner pieces, season with garlic herb seasoning. Cook in a skillet with 1 Tbsp oil for 5-6 minutes per side until cooked through. Rest and slice into strips.
Divide potatoes, broccoli, and chicken into four containers. Add 2 Tbsp ranch dressing to each. Refrigerate until ready to eat.
Notes
For extra flavor, add fresh herbs or lemon juice before serving.
