A delicious and easy meal prep featuring roasted potatoes, seasoned chicken, and broccoli, perfect for a healthy week of lunches.

Ingredients

Potatoes

  • 2 lbs russet potatoes
  • 1/3 cup grated Parmesan
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 3 Tbsp cooking oil, divided
  • 1/2 tsp salt, divided
  • 1/4 tsp pepper

Broccoli

  • 1 lb broccoli florets

Chicken

  • 1 lb boneless, skinless chicken breast
  • 1 Tbsp garlic herb seasoning

Instructions 

  • Preheat oven to 400ºF (200ºC). Dice potatoes into ¾" pieces.
  • Mix Parmesan, garlic powder, paprika, and ¼ tsp salt. Toss potatoes with 1 Tbsp oil and seasoned Parmesan. Roast for 30 minutes, stirring halfway.
  • Toss broccoli with 1 Tbsp oil, ¼ tsp salt, and pepper. Roast for 20 minutes, stirring halfway.
  • Fillet chicken into thinner pieces, season with garlic herb seasoning. Cook in a skillet with 1 Tbsp oil for 5-6 minutes per side until cooked through. Rest and slice into strips.
  • Divide potatoes, broccoli, and chicken into four containers. Add 2 Tbsp ranch dressing to each. Refrigerate until ready to eat.

Notes

For extra flavor, add fresh herbs or lemon juice before serving.
