A quick and flavorful chicken bowl featuring a sweet and savory honey soy glaze, perfect for a satisfying weeknight dinner.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 cup cooked white rice
  • 2 cups broccoli florets
  • 0.25 cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1 piece green onion (sliced, for garnish)

Instructions 

  • Mix soy sauce, honey, rice vinegar, ginger, and garlic to make the sauce. Set aside half.
  • Toss chicken with remaining sauce and marinate for 5 minutes.
  • Heat oil in a skillet, cook chicken until browned, then remove. Cook broccoli until bright green and tender.
  • Whisk cornstarch with water to make slurry. Return chicken and broccoli to skillet, add reserved sauce, and stir in slurry. Cook until thickened.
  • Serve rice in bowls, top with chicken and broccoli, garnish with sliced green onion.

Notes

For extra flavor, add a sprinkle of sesame seeds or a squeeze of lime.
